I can only feel nothing but honor to be sharing this simple yet flavorful recipe. I know that though some of the ingredients may smell different and daunting, I invite you to trust in the process. This is a recipe that I am proud of and one that my husband never seems to get tired of. Vietnamese Lemongrass Chicken is a wonderful year-round recipe – you can grill the chicken in the summer, pan fry on the stovetop, or pop it in the oven or airfryer. Also, I am sharing a common Vietnamese dipping sauce that Vietnamese people love to dip meat, sprinkle over rice, vermicelli noodle, vegetables, and basically anything. It is wonderfully garlicky, tart, savory, and hits all the right umami food notes.

My second recipe is not of Vietnamese origin, but still a meaningful one! I am sharing my Vegan Mac and Cheese recipe – perfect to bring as a side to your next Thanksgiving gathering. A fun fact is that many Asians are lactose intolerant due to the late introduction of cow’s milk to our diet. One of those people is my younger brother who loves cheese, but always carries lactose medicine with him to avoid a challenging time in the bathroom. Mac and Cheese is my favorite savory side. I used to live by a vegan restaurant, and I was obsessed with their vegan mac and cheese. After several attempts and many pounds gained, I came up with a Vegan Mac and Cheese that I am proud of and one that my husband, friends, and family also approve of.
